30 mins Preparation, Make 4 servings
- 2 Promise Gluten Free Rolls
- ½ Butternut squash, chopped in cubes
- 1 Onion, finely diced
- 1 Clove of garlic, crushed
- 1 Tblsp olive oil
- 450 ml Chicken or vegetable stock
- 1 Handful toasted mixed seeds.
Saute the onion and garlic in the olive oil until soft.
Add the butternut squash and continue sauteing for 1-2 minutes.
Add the stock bring to a simmer and cook until the squash is tender.
Then liquidise. Season to taste.
Serve with toasted mixed seeds and the rolls.
