Butternut squash soup with toasted seeds served with Promise Gluten Free brown rolls

INGREDIENTS
  • 2 Promise Gluten Free Rolls
  • ½ Butternut squash, chopped in cubes
  • 1 Onion, finely diced
  • 1 Clove of garlic, crushed
  • 1 Tblsp olive oil
  • 450 ml Chicken or vegetable stock
  • 1 Handful toasted mixed seeds.
STEPS
STEP 1

Saute the onion and garlic in the olive oil until soft.

STEP 2

Add the butternut squash and continue sauteing for 1-2 minutes.

STEP 3

Add the stock bring to a simmer and cook until the squash is tender.

STEP 4

Then liquidise. Season to taste.

STEP 5

Serve with toasted mixed seeds and the rolls.
